The grapes used in the production of Moscato d’Asti come from vineyards grown on hills characterized by medium slurry marl AND dominated by quartzes sand and silt, that can bring an abundance of trace elements while ensuring an immediate expression of the bouquet.
The vines are grown with Guyot (VSP trellised) system. The vineyards are located on steep gradients hills, that allow a perfect maturation of the grapes.
The grape, freshly picked, arrives in the cellar intact and is rapidly de-stemmed and gently pressed to extract from the peel and the outer area the grape only the most noble and aromatic fractions. The must is chilled immediately until the next partial fermentation in autoclave, so that the carbon dioxide, which gives lively mousse, remains partially dissolved in the wine. The fermentation is then stopped by refrigeration, in order to leave approximately 140 grams of sugar per liter.
Perlage is fine and abundant, while the color is straw-yellow with golden reflections. The aroma is intense, rich in aromatic scents – in particular, it reminds to the orange blossom, peach and apricot – in perfect balance with the low alcohol percentage and the acidity, never very high, which gives the product a pleasant freshness.
Sweet and aromatic wine well combined with desserts at the end of a meal and the classic nougat with hazelnuts. An ideal companion in moments of celebration and a nice refreshing drink at any time of the day, particularly after sports efforts.
