Tempranillo is considered Spainäó»s benchmark grape, defining the character of the land from where it is grown. The grapes for this wine come from 30 year-old vines in lime-based soil in the Campo de Calatrava in Valdepeí±as, situated at 2350 feet (716m) above sea level. Only the best Estate-grown Tempranillo grapes are chosen during harvest, which takes place in the beginning of September. The wine undergoes controlled fermentation in stainless steel tanks and a long maceration at temperatures not exceeding 82Œ_F (28Œ_C).
This wine is ideally served at room temperature with a large variety of foods, especially with vegetable-based casseroles, gazpachos, red meat and mature cheeses.
